A whole-roasted pig on display in the markets of Otavalo, Ecuador. The pig is flamed-over with a blow torch and meat is slowly taken out the back and further cooked to the patron's desire. The stall owner said she goes through three whole pigs in a day. The red peppers in its ears and mouth caught my attention.
